Friday Chicken

Every Friday I have friends over to test the casseroles I make, and help me get rid of them. But after four straight weeks I got tired of entertaining and decided to cook for myself tonight. I made my own pasta sauce from scratch for the second time in my life—it’s surprisingly easy and cheap, and it tastes so much better than the jarred stuff. I also decided to cook up the chicken I was going to put in the casserole I didn’t make tonight. I know this Friday Chicken isn’t a casserole but it was prepared in one dish and is too good and easy not to share. So good, in fact, I had to call a friend over to help me eat it.

Friday Chicken

Ingredients:

2 lbs or about 3 large or 4 medium chicken breasts
1/2 cup vegetable broth
1/2 cup balsamic vinegarette
1/2 cup extra virgin olive oil
1/4 cup soy sauce
1 tablespoon cayenne pepper
1 tablespoon salt
1 tablespoon pepper
2 cloves fresh garlic, sliced
1/2 cup chopped green onions

Instructions:

Place chicken breasts in shallow baking dish
Rub chicken with the salt and pepper
Pour vinegarette, broth, olive oil and soy sauce over chicken breasts (no need to mix first, but you can if you want)
Flip the breasts over in the marinade a few times
Sprinkle cayenne pepper, garlic, and green onions on top of chicken
Cover and refrigerate for at least 3 hours
Bake uncovered at 400 for about 1 hour and 15 minutes or until done
For best results baste at least once while baking
