Days before my book, Casserole Crazy: Hot Stuff for Your Oven, hit the shelves, the lovely Cathy Erway of Not Eating Out in New York came by for an evening of casserole and conversation.
We decided to make Beefy Mac from Casserole Crazy and I made one little substitution that may have changed my life forever…
Instead of using regular Gouda cheese (the recipe calls for 1/2 pound, shredded), I used a smoked Gouda, and cut it up into chunks. So instead of a mild Gouda flavor throughout, we got bursts of the smoked stuff.
Everything else was done according to the recipe, which can be found on page 121 of Casserole Crazy, and as Cathy said in an email the next day, “Mmmm… beefy mac! That was one of the best casseroles I’ve ever had in my life.”

ok, i ordered your book, totally based on this entry!!! can’t wait to try it out…my banker wife and i are tightening our belts at least until after the election, or until the bailout takes and we know what direction the economy is going to go (hopefully up, or at least stabilizes)–i think these recipes will help us in our quest!!! thank you!
