Congratulations on the book! Wow...as a casserole lover, I can't wait until it comes out.

I understand your need to concentrate now. But, know that your posts and recipes are missed.

Hi Kiwi Girl, "Harvest Vegetable Scallop" is: 4 med carrots, thinly sliced (about 2 cups) - 1 pkg (10 oz.) frozen chopped broccoli, thawed and drained - 1 1/2 C. French Fried Onions - 5 small red potatoes, sliced 1/8 inch thick (about 2 cups) - 8 oz. pasteurized processed cheese spread (Velveeta's the best) - 1/4 cup milk - ground black pepper - seasoned salt. To prepare: Combine carrots, broccoli and 1 C. French Fried Onions in 8" x 12" baking dish. Tuck potato slices into vegetable mixture at an angle. Dot vegetables evenly with cheese spread. Pour milk over vegetables; sprinkle with seasonings as desired. Bake, covered, in 375 degree oven for 30 min. or until vegetables are tender. Top with remaining onions; bake, uncovered, 3 min. or until onions are golden. Makes 6 servings. ENJOY! - As with any recipe, I make it to suit my taste. I use a little less carrot and I find that 2 cups of the potatoes seems to be a little too much potato. I use more cheese and sprinkle more F/F onions on top for extra crunchiness. I hope you like this as much as my family does! Happy Holidays! ~ Angie

Did you ever find your f/f onions? I work for Costco and we sell French's brand in 1 1/2 lb bags for $4.50 in Hanover, Maryland. I love 'em too and would be glad to help you get them. I also have a recipe clipped from the back of a can of Durkee Fried Onions more than 20 years ago called "Harvest Vegetable Scallop" that is delicious! To this day it is still a must have at all family occasions. Although it contains broccoli and carrots even the children love it and go back for seconds! Let me know and I'd be happy to share. ~ Angie
